Vegan Recipe: Chickpea Salad Sandwich

Here's the Ingredients:

1 (15 oz) can chickpeas, drained and rinsed

1/4 cup vegan mayonnaise

2 green onions, thinly sliced

1/4 cup diced celery

1/4 cup diced red bell pepper

1/4 cup chopped fresh parsley

1 tbsp Dijon mustard

1 tbsp lemon juice

1/4 tsp garlic powder

Salt and pepper, to taste

8 slices of whole-grain bread

Optional toppings: lettuce, tomato slices, cucumber slices, avocado

Instructions:

In a large mixing bowl, roughly mash the chickpeas using a fork or a potato masher. You want to achieve a chunky texture with some whole chickpeas remaining.
